The Mercantile at Sawmill invites you into a modern New Mexican Market and Cafe that will awaken your senses and put you in a culinary state of mind.
The Design of the Mercantile market is meant to emulate a pantry and kitchen that one could envision as their own. Products will be placed amongst the shelves that blurs the line from traditional retail. The space is meant to inspire guests to bring a piece of the market home with them where they can find the most curated boutique products New Mexico has to offer.
The wood burning oven is the heart of the kitchen, practicing the traditional method of preparing rustic and clean food. The Mercantile features New Mexican farmers and merchants.
Currently in New Mexico many restaurants do not partner with local farmers and often use imported frozen food. Our goal is to make sourcing local ingredients the norm and to elevate the existing cuisine to a new level.
Connected to the Mercantile Cafe, the Wine Bar is meant to feel like a private dining room extension of the Mercantile Cafe. Clean and rustic small plates to share will be served with an ever – changing menu featuring wines and champagne from New Mexico and around the world.
Diners are encouraged to escape the noise of the market (and children) and stay a while, relaxing in this breezy humble space.
